The wine is then rested for up to 6 months on the fine lees adding to the beautiful texture
His wines are always spontaneously fermented with native yeasts from the vineyard and are never fined or filtered
and have a lengthy prime drink window of upwards of two decades

Yet here the temperatures are a bit cooler, the nights a bit brisker, and so the Chardonnay that the young brothers Brand farm comes to us with a tad more acidity, a few thousand more volts of electricity than most of the more luxurious examples from Burgundy
